Scan telephone ranges of large businesses. I still find alot belonging to hospitals and retail stores. I can list the few companies I know here that have Remote Access Dialin also.
So they are around, its just not quite as prevalent as it used to be, so start looking in a more specific place. Or maybe I'm just confused. But by dial-in, maybe you just mean connect to the computer, ShadowNinja? If that is the case, on the port that you find open on a certain IP, you'll want to use a program called Telnet to connect to it. If you're on windows go Start->Run and type in Telnet, then read the instructions.
